Power Food Recipes From Sweet Sweet City;Kale/Egg Salad & Zucchini Banana Bread

Tuscan Kale Salad with Avocado Tehini Vinaigrette with a 4 minute boiled Egg

 

Directions:

Remove rib from kale and slice in thin strips.

Dressing: 

 

In a small food processor combine

1/2 an avocado

2 tablespoons sesame paste

Zest of one lemon and the juice

1 tablespoon olive oil

Salt/ pepper

2 to 4 tablespoons of water

Optional 1 small garlic clove

Garnish:

Toasted sesame seeds

In a dry skillet toast sesame seeds over medium flame until golden. Keep an eye on them. They burn easily.

Egg:

Place egg in a a small pot and cover with room temperature water. When the water begins to boil close the fire and cover the pot. I’m Set your alarm for 4 minutes. Remove hot water  from pot and let egg sit in cold water for two minutes.

Process all salad dressing ingredients together. dressing will be thick. Add water to thin to your preference.

Start with alittle bit of dressing on the kale and massage with plastic gloves to combine.

Sprinkle sesame seeds on top.

Zucchini Banana Bread with Date Sugar:

 

Pre heat oven to 350 degrees

Ingredients: 

1 cup bobs red mill date sugar

1/2 cup melted coconut or vegetable oil

2 bananas

1 egg

2 teaspoons vanilla

1 1/2 cups whole wheat flour

1 teaspoon cinnamon

1/2 teaspoon salt

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 1/2 cups shredded zucchini                               ( approximately 1 large or two small zucchini)

1/2 cup mini chocolate chips ( optional)

Topping:

1/4 cup unmelted coconut oil

1/2 cup flour

1/4 oats

1/2 teaspoon cinnamon

Pinch of salt 

 

Directions:

In a bowl combine flour, cinnamon, salt, baking powder and baking soda. Set aside.

In another bowl, mash banana with a fork leaving it wth dime size chunks. Wisk in oil, vanilla, egg and date sugar until combined.

Add in dry ingredients and stir to combine. Do it over mix! Fold in zucchini and chocolate chips.

Line baking pan with parchment paper leaving at least two inches hanging off from each side. This allows you to remove the cake by lifting the two edges up keeping the crumb topping from falling off. Spray with Pam for baking and bake for 45 minutes or until toothpick inserted into center comes out clean.
